We use exclusively selected ingredients from Italian and Trentino suppliers, guaranteeing maximum quality and freshness.

I deeply love my job, and my goal goes beyond preparing food: I want to convey awareness and sensitivity to my customers.

I believe that my experience as a chef can give added value to my product, both from a qualitative, aesthetic and nutritional point of view.

THE METHOD

Levà is yeast, an ingredient that allows flour to be transformed into something more edible.

The world of fermentations is very vast and human beings have always used fermented foods to nourish themselves and to make foods more digestible and healthy.

Cheese, cured meats, wine, beer are all foods that have undergone fermentation.

We are strongly linked to these concepts: tradition is not something static, which has always existed, but something that has worked, has been successful and has perpetuated itself by transforming, mixing, keeping itself in ferment just like yeast.

We like fermented products made with flour.

In addition to brewer's yeast, we also use mother yeast (LA MARE). The sea is a mix of different microorganisms in ferment whose collaboration activates an extraordinary process: bread making is therefore something concrete but always in a process of change, of evolution.

We thus follow tradition, respecting it, but interpreting it according to the cultural, nutritional and taste needs of our times.
